Brassica oleracea L. acephala, known as kale, is an annual or biennial herbaceous plant. It is characterized by not forming the compact head of a cabbage, instead developing stems with large, curly or flat leaves, which are green or purple in color. It is native to the southern and western coast of Europe and is very hardy. For cultivation, it prefers temperate and humid climates, resisting cold well, which even improves its flavor. It requires deep, fertile soils with a high organic matter content and good drainage. It is sown in spring or summer to be harvested from late autumn to winter, often in staggered fashion by removing the outer leaves. It is valued for its high nutritional content.
